Wellness Daily Superfood coffee

If you know me, you know I’m a big smoothie fan, but sometimes when it’s cooler outside I crave a warm mug in my hands.

If you know me, you know I’m a big smoothie fan, but sometimes when it’s cooler outside I crave a warm mug in my hands. 

I didn’t want to trade in all of the nutritional benefits of my usual morning Super Smoothie for that warm drink, so I created this Superfood Coffee to fight cancer and beat disease in a warm morning beverage.

This drink is so delicious that even non-coffee drinkers will crave it. Plus it’s packed with antioxidants (not sure why that’s awesome, check out this blog). 

Not to mention, is made with 100% cacao powder, a known cancer fighter and disease protector. There is no sugar or milk in this rich flavored beverage packed with natural ingredients that are loaded with healing nutrients.   

Wanting to make my Superfood Coffee perfectly at home, I started my search for the best, healthiest brew with the great flavor.  I needed just the right equipment and wanted the  full experience of grinding my beans fresh each day. I ordered a very simple grinder that allows me to get just the right grind for the brewing of this drink. 

Typically, coffee irritates my stomach, so I wanted to find beans that were fresh roasted, organic grown so I wasn’t adding more pesticides to my diet, and beans that were low acid.

There’s many ways to brew coffee, so for this Superfood Coffee I researched what would be the best for the taste, my health, and lowering the acidity of the drink. I landed on the pour over brewing method.  This healthy brewing process, if done correctly, meets all of my requirements for the best brewing experience. 

Not only does pour over allow me to brew coffee well, I can steep the green tea with the coffee grounds together.  The pour over method is also one of the fastest and most economical methods to make great coffee.  You can create coffee that is soft and well balanced with just the right flavor.  

The key to the perfect cup is great quality beans freshly ground to a medium fine grind and water at 205 degrees F.  The rate and speed that the water passes over the coffee grounds matters too.  

Too fast and the coffee will taste sour and watery and too slow of a pour will create over extraction of the coffee and taste very acidic.  When you get the right pour over equipment with a flat bottom funnel for brewing just right, you will enjoy fresh tasting coffee that is clear, no sediment, lower natural oils, low cost, and faster brewing time.

Your Superfood Coffee can be a warm morning beverage or poured over a large glass full of ice to turn it into an Iced Superfood Coffee.  Whichever way you choose to enjoy it, you can feel good knowing your body was just supercharged with healing antioxidants that reduce inflammation in the body with a delicious, naturally calorie free beverage.

Ingredients

Makes: 16 ounces | Serves: 1 | Portion size 16-ounces

  • 20-ounces water

  • 4 tablespoons organic coffee, medium fine grind

  • 2 teaspoons loose leaf green tea

  • ¼ teaspoon ground cinnamon, organic

  • 1 tablespoon 100% cacao powder

Directions

Place 4 tablespoons of medium fine ground organic coffee beans of your choice of roast in a coffee cone in the paper filter. A flat bottom coffee cone works best for pour over coffee. For half-caf Superfood Coffee use 2 tablespoons ground coffee beans and 2 tablespoons decaf ground coffee.

Boil hot water in a gooseneck kettle (ideal for slow pouring the coffee onto the grinds). Remove the water from the heat and let it sit for 20 seconds to cool down to 205˚ F. Pro tip: If you are using the Fellow Stagg EKG Studio Edition electric kettle set to the exact temperature of 205˚ F.

Shake the coffee in the coffee cone to even out the grinds.

Top the ground coffee with 2 teaspoons of green tea loose leaf (see below for my favorite green tea).

Pour about 2 ounces or 60ml of the hot water over the coffee and green tea leaves starting at the center and moving in a spiral to the edge and back to the center saturating all the coffee grinds and green tea leaves. Let the coffee grinds bloom for about 30 seconds.

Repeat a 10 second slow pour starting at the center and spiraling around to the edges and back to the center. Repeat 2-3 times making sure to pour again when the water is about down to 1 inch above the bed of coffee grinds.

The brewed coffee will drip slowly into your carafe or mug.

Once the coffee and green tea is brewed, add the ¼ cup of cinnamon and 1 tablespoon of cacao powder. Whisk all ingredients. You can add more hot water to this coffee if you prefer a less concentrated flavor. Sip on this coffee all morning and enjoy a delicious beverage that is loaded with antioxidant superfoods.

Pour this brewed coffee/green tea beverage mixed with cacao and cinnamon over a large glass loaded with ice to turn it into an Iced Superfood Coffee.

Tips

Gear, Beans, Brew, Taste: You need just the right combination of these four components to have the perfect cup of coffee. Remember, this is all from a non-coffee drinker (that’s me!) taking the time to learn all of this and show you what has become my favorite combination for a morning superfood boost!

Pick your coffee beans. It is up to you if you buy pre-ground or grind your own, but I always recommend going with freshly ground for a ridiculously good cup of pour over coffee. I choose organic coffee beans.

The benefits of pour over coffee:

a. It is very easy. You only need your favorite beans, hot water, and a few minutes.

b. It is affordable. Making pour over coffee at home is much more affordable than using an espresso machine, purchasing expensive pods, or buying coffee at the coffee shop.

c. It tastes amazing. As long as you use high quality coffee beans freshly ground to the best grind for pour over coffee – a medium coarse grind – and start with water at 205˚ F so it is just the right temperature for a full extract to create the best flavor from the coffee, your coffee will be rich, full bodied, and delicious.

d. Anyone can do it. With the right equipment and following the simple steps, anyone can make delicious pour over coffee in no time. So if you are looking for a great way to make coffee at home, pour over coffee is an excellent option.

You need the right equipment. Dripper - this is the most important tool for making pour over coffee. You need to find one with good flow to extract all the grounds evenly. Check out the links below for my favorite Pour Over coffee brewer by Fellow.

You got this. Adjust the portions in this Superfood Coffee to meet your tastebuds. You might like more cacao, a more diluted coffee, or a stronger coffee. Like me, you might like a decaf version of this coffee or a 50/50 decaf. Try adding vanilla for another flavor boost. This is a calorie free Superfood Coffee that you can drink anytime of day without spiking blood sugar or peaking your insulin levels, as long as you stick to the 100% cacao powder. If you use 60% cocoa, you will find ingredients like sugar and even powdered milk in the cocoa. If you want this Superfood Coffee to be the healthiest version, use 100% cocoa and cinnamon and add a dash of organic, 100% vanilla if you like a more sweet taste.

-I am a fan of bananas. They get a bad rap on social media with those focused on carbs being bad and looking at continuous blood sugar monitoring. Bananas are a whole plant food loaded with soluble fiber. Soluble fiber helps us bind and delay the surge of blood sugar to improve insulin resistance and helps to keep us full AND removes cholesterol from our body. When we eat bananas as part of a meal or snack that has protein and healthy plant fats, we can get all the wins of bananas with high fiber and healthy carbs and not end up with a blood sugar spike from that meal. For athletes and those exercising regularly, bananas are a great way to fuel the body and replenish the muscle fuel glycogen. So if you are moving and eating healthy meals, bananas can be part of your diet and wellness routine. They are personally one of my favorite fast foods to eat.

Here is my problem- I am a Type I diabetic and 74 grams (in my experience- a recent diagnosis) would take a lot of short acting units of insulin 4 units for 80 grams. I’m concerned about this. Wonder is this is the program for me?

-I specialize in diabetes care and have helped hundreds of people with both type 1 and type 2 diabetes. There is 74 grams of total carbs in this smoothie and 23 grams of these carbs are from fiber since the ingredients are all whole plant foodsI What we teach in Dr. Cheryl Wellness is how to count carbs and focus medication dosages on NET carbs - so this smoothie as it is has 51g of net carbs and this is a full meal replacement that will keep you full for 4 hours. So if you need 1 unit of short acting insulin for every 20 grams of carbohydrate (as you noted in your comment your Rx is with type 1 diabetes), you would need 2.5 units of insulin for this full meal smoothie. I help members adapt a meal plan and wellness routine that works for them even with type 1 diabetes. People with Type 1 Diabetes, you can become insulin resistant and so it takes both food and lifestyle habits to help you become more insulin sensitive and at the same time not let you miss out one getting the healthy antioxidants you need to combat other diseases, have a healthy gut, and add more healthy years. My husband was diagnosed with early onset Parkinson’s disease at 67. His symptoms were shuffling of feet, slurred speech, low volume speech, degradation of handwriting, horrible driving skills, and his right arm is held at 45 degree angle. He was placed on Sinemet for 7 months and then Sifrol and rotigotine were introduced which replaced the Sinemet but he had to stop due to side effects. We tried every shot available but nothing was working. There has been little if any progress in finding a reliable treatment, he has to quit his meds due to side effects.
