Sun Dried Tomato Hummus

Not only is it fresher and more flavorful, but you also have complete control over the ingredients that go into it. Plus, making your own hummus is often cheaper than buying pre-made versions.

So how can you use this sun dried tomato hummus? Here are three practical ways:

  1. As a dip: This hummus is a great option for dipping fresh veggies, pita chips, or crackers. It's also a crowd-pleaser at parties and potlucks.

Ingredients

Makes: 2 1/2 cups | Serves: 24, Portion size 1-ounce

  • 1 16-ounce can garbanzo beans with liquid

  • ¼ cups sesame seeds

  • 10 olives, fresh ripened

  • 2 tablespoons extra virgin olive oil

  • 3 tablespoons fresh lemon juice

  • 2 large garlic cloves

  • ¼ teaspoon ground cumin

  • ½ teaspoon sea salt

  • ¼ cup sun dried tomatoes, chopped

Garnish option

  • 1 teaspoon fresh parsley, finely minced

Directions

In a blender bowl, place beans with liquid, sesame seeds, olive oil, lemon juice, garlic, cumin, and salt. Process until mixture is completely smooth, Add additional 1 to 2 tablespoons of water if a thinner consistency is desired.

Add the sun dried tomatoes to the blended hummus and process. Chill until ready to serve.
